Meals with Melody Anne - Are you Ready to get Steamy in the Kitchen?

Are you ready to get steamy in the kitchen with a delicious Low Carb Cheesy Beefy Enchilada Casserole? This recipe is so good you wouldn’t even know it’s low carb, and that’s what I’m all about. Just because you’re eating healthy doesn’t mean you have to sacrifice taste. So let’s get spicy…

Delicious Cheesy Beefy Enchilada Casserole 


Nutritional Facts-
Per Serving: 411 Calories; 31g Fat; 27g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

Prep time-about 1 hour
Cook Time – 40 minutes

Layers (In place of tortillas)
-4 ounces cream cheese, softened
-2 eggs
-1 TBSP Taco Seasoning (See below for homemade recipe)
-2 Cups shredded cheddar cheese (8 ounces)

Put all of the crust ingredients in a large bowl and mix until smooth and creamy. Grease 2 a 9 x 13 baking dish or cookie sheets; spread the cheese mixture thinly and evenly over the bottom. Bake at 350ยบ, 25 minutes. Let stand for 10 minutes. Then cut them into small squares and peel from pans. You will layer the bottom of your baking pan with a layer. And do a second layer in the middle.

-3 pnds ground beef
-2 to 3 TBSP Taco Seasoning
-Large can of enchilada sauce
-2 4 ounce cans chopped green chiles (hotter is better)
-2 Cups (or more) cheddar cheese, shredded.

Brown the hamburger; drain fat. Stir in the seasoning, enchilada sauce and chiles. Let simmer.

Spread hamburger mixture over the crust, add layer of cheese, add another layer of your “tortillas” then repeat. Bake 40 minutes or until hot and bubbly. Serve with the toppings of your choice (add additional carbs).
Makes 12 servings
Can be frozen
Optional Toppings:
  Shredded lettuce
  Sour cream
  Pickled jalapeno slices
  Guacamole (or fresh avocado)

Bonus Recipe-

Do it Yourself Taco Seasoning (so easy and so good)

2 TBSP Chili Powder
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1 tsp Paprika
3 tsp Ground Cumin
1/2 tsp Crushed Red Pepper Flakes
1/2 tsp Dried Oregano
optional; pinch of salt and pepper

Mix all together and use. Store in airtight container if not using right away.

This blog is about to get a whole lot steamier – from the kitchen you fiends Well, we’re definitely going to be doing some cooking, but we’re also going to share those things that are hard to learn about. We want to bring you into the world of Melody Anne. It might get goofy and it might get scary (3am night binges with Ben and Jerry’s and a computer) but it will also have some great info. I’m looking forward to taking you on this journey with me. Come on in to my house and let’s have a glass of wine and chat.

It's almost spring time. I can smell it in the air. I got to spend time with my miniature horse, Pixie, this weekend, brushing her down and even got some kisses from her. She's so sweet, and boy is she shedding. I was wearing a lot of her hair at the end of each brushing. I can't wait for summer. I know there's a reason and purpose for winter, but the cloudy, cold, SHORT days get old really quick.

I just got home from Hawaii last weekend and man, did I learn a lot at that conference. I didn't get outside nearly as much as I would have liked to have been, but it was so worth it to be there. I got to spend some fun time with some of my favorite authors including the fantastic, Ruth Cardello, Lynn Raye Harris, Violet Duke, Lauralin Paige and many more. I met with some great people as well. There are so many new and exciting things coming in the next few months and I can't wait to share it with you all!!

Tomorrow, "Her Forever Hero" will be releases at all retailers. I hope you've enjoyed my Unexpected Heroes series!! It's been so fun to write.
