in the kitchen with a delicious Low Carb Cheesy Beefy Enchilada Casserole? This
recipe is so good you wouldn’t even know it’s low carb, and that’s what I’m
all about. Just because you’re eating healthy doesn’t mean you have to
sacrifice taste. So let’s get spicy…
Delicious Cheesy Beefy Enchilada

Layers (In place of tortillas)
-4 ounces
cream cheese, softened
-2 eggs
-1 TBSP
Taco Seasoning (See below for homemade recipe)
-2 Cups
shredded cheddar cheese (8 ounces)
Put all
of the crust ingredients in a large bowl and mix until smooth and creamy.
Grease 2 a 9 x 13 baking dish or cookie sheets; spread the cheese mixture thinly
and evenly over the bottom. Bake at 350º, 25 minutes. Let stand for 10 minutes.
Then cut them into small squares and peel from pans. You will layer the bottom
of your baking pan with a layer. And do a second layer in the middle.
Topping:
-3 pnds
ground beef
-2 to 3
TBSP Taco Seasoning
-Large
can of enchilada sauce
-2 4
ounce cans chopped green chiles (hotter is better)
-2 Cups
(or more) cheddar cheese, shredded.
Brown the
hamburger; drain fat. Stir in the seasoning, enchilada sauce and chiles. Let
simmer.
Spread hamburger
mixture over the crust, add layer of cheese, add another layer of your
“tortillas” then repeat. Bake 40 minutes or until hot and bubbly. Serve with
the toppings of your choice (add additional carbs).

Recipe-
Do it Yourself Taco Seasoning (so easy and so good)
2 TBSP
Chili Powder
1/2
tsp Garlic Powder
1/2
tsp Onion Powder
1 tsp
Paprika
3 tsp
Ground Cumin
1/2
tsp Crushed Red Pepper Flakes
1/2
tsp Dried Oregano
optional;
pinch of salt and pepper
Mix all
together and use. Store in airtight container if not using right away.
